Kale and Radicchio Citrus Salad

Salad Ingredients

  • 1 bunch dinosaur kale, chopped

  • 1 head radicchio, chopped

  • 3 blood oranges, peeled and sliced

  • 1/2 cup pistachios, chopped

  • 1/2 cup pomegranate seeds

Dressing Ingredients

  • 1/3 cup olive oil

  • 1/3 cup pomegranate juice

  • 2 tbsp lemon juice

  • 1 tbsp honey

  • 1 tsp dijon mustard

  • 1 tsp salt

  • 1/2 tsp pepper

Steps

  1. Prepare the dressing. Add all dressing ingredients to a small bowl and whisk until combined. You may add additional salt and pepper if desired.

  2. Prepare the salad. Add kale and radicchio to a large bowl and toss with 3/4 of the dressing.

  3. When ready to serve, arrange kale and radicchio on a serving platter of choice. I prefer a long platter. Top with the orange slices, pistachios, and pomegranate seeds. Toss gently so these ingredients don’t fall to the bottom. Drizzle with the remaining dressing and enjoy!
