Pickled Kale and Orzo Salad
Salad Ingredients
1/2 bunch kale, chopped
8 oz orzo
1-15.5 oz can chickpeas
1/2 cup pickled red onions*
1 cup crumbled feta
Dressing Ingredients
1/2 cup olive oil
2 tbsp apple cider vinegar
2 tsp dijon mustard
1 tsp honey
1 garlic clove, grated or finely minced
Juice of 1 lemon
Salt and pepper to taste
Steps
Cook orzo according to package instructions.
In a small bowl, whisk together dressing ingredients.
In a large bowl, combine orzo, chickpeas, chopped kale, pickled onions, and feta. Toss with the dressing and serve.

Add thinly sliced red onions to a jar. Cover halfway with vinegar (white or apple cider works best here) and halfway with warm water. Add one tablespoon of honey. Close jar with a lid and shake to combine. Let sit for at least one hour, preferably more.
