Pickled Kale and Orzo Salad

Salad Ingredients

  • 1/2 bunch kale, chopped

  • 8 oz orzo

  • 1-15.5 oz can chickpeas 

  • 1/2 cup pickled red onions* 

  • 1 cup crumbled feta 

Dressing Ingredients

  • 1/2 cup olive oil 

  • 2 tbsp apple cider vinegar 

  • 2 tsp dijon mustard 

  • 1 tsp honey 

  • 1 garlic clove, grated or finely minced 

  • Juice of 1 lemon 

  • Salt and pepper to taste 

Steps

  1. Cook orzo according to package instructions. 

  2. In a small bowl, whisk together dressing ingredients.

  3. In a large bowl, combine orzo, chickpeas, chopped kale, pickled onions, and feta. Toss with the dressing and serve. 

*Pickled Red Onions Recipe

Add thinly sliced red onions to a jar. Cover halfway with vinegar (white or apple cider works best here) and halfway with warm water. Add one tablespoon of honey. Close jar with a lid and shake to combine. Let sit for at least one hour, preferably more.
