Rye Brownies

Ingredients

  • 1 cup butter (2 sticks)

  • 1 cup chopped dark chocolate (I prefer 85%)

  • 4 eggs 

  • 2 cups sugar 

  • 1 tbsp molasses 

  • 1 tsp vanilla extract

  • 1/2 tsp salt 

  • 1 cup + 2 tbsp rye flour  

Steps

  1. Preheat oven to 350°F. Grease a 9” x 13” baking dish.

  2. Fill a saucepan with two inches of water. Bring water to a simmer over medium heat. Place a heatproof bowl on top of the saucepan to make a “double boiler.” 

  3. To the bowl, add the butter and chocolate, and stir until melted. Set aside.

  4. To another bowl, add the eggs and whisk. Add the sugar, molasses, vanilla, and salt, and whisk again. Now add a small amount of the butter and chocolate mixture to the egg mixture to temper. Add the rest of the butter and the chocolate mixture. Mix in the flour using a spatula.

  5. Pour the batter into the prepared baking dish and smooth the top with the spatula. Bake for 30 minutes, until a toothpick comes out clean.
