Veggie Frittata

Ingredients

  • 7 eggs 

  • 1 cup cottage cheese 

  • 1 cup spinach, chopped  

  • 1 red bell pepper, diced 

  • 1 1/2 tsp salt

  • 1/2 tsp pepper 

  • A few chives, finely chopped 

Steps

  1. Preheat oven to 375°F. Grease a pie dish and set aside.

  2. To a blender, add the eggs and cottage cheese. Blend until smooth. 

  3. Pour the egg and cottage cheese mixture into a large bowl. Add spinach, bell pepper, salt, and pepper, and whisk. 

  4. Pour mixture into the prepared dish and bake for 25-30 minutes, until the frittata is set and beginning to brown. Garnish with the chives and serve.
