Veggie Frittata
Ingredients
7 eggs
1 cup cottage cheese
1 cup spinach, chopped
1 red bell pepper, diced
1 1/2 tsp salt
1/2 tsp pepper
A few chives, finely chopped
Steps
Preheat oven to 375°F. Grease a pie dish and set aside.
To a blender, add the eggs and cottage cheese. Blend until smooth.
Pour the egg and cottage cheese mixture into a large bowl. Add spinach, bell pepper, salt, and pepper, and whisk.
Pour mixture into the prepared dish and bake for 25-30 minutes, until the frittata is set and beginning to brown. Garnish with the chives and serve.
